Pretzels, soft

Makes about 10

Ingredients:
	1	package		active dry yeast
	1-1/2	cups		warm water (lukewarm, not hot!)
	1/3	cup		brown sugar
	5	cups		all-purpose white flour
	1/2	cup		baking soda (approximately)
	5	cups		water

	to taste		kosher salt

Directions:

	Dissolve yeast in warm water (with a very small pinch of sugar)

	Combine flour and sugar in a large mixing bowl.
	Stir in water mixture.

	Beat until smooth / knead until elastic (10 minutes or so)

	Heat oven to 475 F.

	In a saucepan, bring 5 cups of water and 1/2 cup baking soda
	to a boil.

	Form pretzels from dough and boil each one about 30 seconds,
	until it floats and turns yellow.  Drop onto a greased rack.
	Apply kosher salt.

	Bake 8 to 10 minutes; remove from rack immediately or they'll
	stick.
